I'm redoing my wiring harness.  The only connctors that I have yet to find are the 90 degree / right angle  female spade connectors that plug into the voltage regulator etc.

I've used vintageconnections.com for everything else - they are great !

Does anybody know what you would call those, or where you could find that type of connector.
Yep, I'm the kid that figured out how to put things back together...eventually.

I believe I have seen them referred to as "flag" connectors?

Yep flag terminals are what they are called. Any online electrical terminal company should have them. If you have an appliance repair store in your area you might want to check with them too as they are commonly used in ovens and other appliances.
