I should drain the oil before doing the clutch, right?

My manual doesn't mention anything about draining the case of oil before removing the clutch.  I should though, to avoid a big mess, right?  But if I don't have to, I'd rather not, I just changed the oil.

Well, I'd think so, based on my 550 manual (what manual are you reading?)

The cb750 has a dry sump system.  In theory, oil isn't carried in the sump like on a cb550.  However, there is an anti siphon valve in the line going to the oil tank.  If that leaks, the 750 sump will fill up, too, and so will the clutch housing.

With either bike, liquids collect in the low part of a vessel.  Leaning the bike over on its side will place the clutch housing  at the high point of the vessel.

Padding, bracing, and stability of the bike are your responsibility.  As well as preventing bits of gasket, screws, and such from dropping inside the sump.

The sump on the 750 is far below the clutch assembly and I was able to redo my clutch without draining it. One tip is to have it on the kick stand as the oil will be away from the clutch area, as TwoTired mentioned. Have a small pan in place just in case a little dribbles out.

Although manual does not say so, best to drain crankcase.
