Cheese is cheese. Samuel Pepys buried cheese in his garden to save it during The great fire of London. He dug it up a year or so later.
I don't go by dates, I go by common sense. If it looks or smells dodgy don't eat it.
'Then' and 'than' are completely different words and have completely different meanings. Same with 'of' and 'have'. Set and sit. There, their and they're. Draw and drawer. Could care less/couldn't care less. Bought/brought FFS.

This one is Sargento cheddar.  I see it on all the cheese packages I use.  Says you can freeze up two two months, or leave unopened until the "expiration date" or "use within a certain amount of days after opening."  My parmesan was moldy but the cheddar looked ok.  Down the hatch!   8)

Cheese is my profession.  Seriously. 

It's a very stable food.  For the most part, even when the surface of it gets contaminated, you're perfectly fine just cutting off the outer layer and eating the rest.  And even if you eat the "bad" part, it's not going to hurt you, but it probably won't taste all that good. 

Cheese is similar to beer and wine in that the organisms that turn it into what it is also do a very good job of keeping the harmful organisms away.

Just got some Kansas Cottonwood cheddar when I was getting some Parmigiano-Reggiano for grating at the cheese store. Man I could eat that whole block I bought if it wouldn't stop me up solid.
