Cheese is my profession. Seriously.
It's a very stable food. For the most part, even when the surface of it gets contaminated, you're perfectly fine just cutting off the outer layer and eating the rest. And even if you eat the "bad" part, it's not going to hurt you, but it probably won't taste all that good.
Cheese is similar to beer and wine in that the organisms that turn it into what it is also do a very good job of keeping the harmful organisms away.
