'78 CB550K carb tuning help

Hey guys,
I just finished my '78 CB550k Cafe build and got the bike started and running with a high idle. The bike was all stock and running with less than 20k miles it before I started my build about 8 months ago.
I now have velocity stacks and a Mac 4-1 header w/ no muffler on it.

I don't know carbs that well. If I knew what to do I take apart replace parts and get them back together easily.
I'm not sure where to start with new jet sizes and needle placements. Is anyone else running a similar set-up or have a good guideline on which way to go with jets and needles when moving to straight pipe and no air box?
