cb750 '72 head on '78 engine

Not sure if the oil passage ways will line up.  Think you need a block / head combo, but am not 100% sure.

NO that will not work.
The 1978 CB750 has many changes.
The cam tower is wider on the 1978 CB750.
Other problems also.
Cylinder head studs were larger on the 1978.
The valve cover venting,and drains were different also.

Ask KEN at Cycle-X he knows all the ins and outs.
