The final answer was not carb cleanliness, like I was saying.
What was happening was the following:
When I first posted, the previous owner had a super small 78 main jet in there, I then drilled it to 120 size. I had been running with a lot of choke to keep the 78 richer. When I changed to the 120 the choke was making it too rich at WOT, hence the bog. So first the bog was due to not enough fuel, lean causing the engine to run hot and then seize up. Then after jet change, it was too rich at WOT with choke, causing the bog again.
Now she runs great.
Rode the bike 150 miles so far and it's good. Now working on sorting other small issues.
