I'm in the UK, not stripped it down yet but a long spell at 115 mph was too much for her.
Some time since I built the engine, can't remember what head gasket I used but probably not stock, any ideas?

They rarely actually blow a gasket. It's usually the rubber pucks under the cam towers leaking &/or stretched cylinder studs that create loosened nuts at the head IMO. There are 2 gaskets out there now you could choose from. MLS (multi-layered steel??) from CycleX or traditional from Cometic. If you find that some of the nuts on the studs are somewhat loose you may want to consider a heavy duty cylinder stud kit also from APE. Big bore kits and flogging will usually create this condition MUCH sooner than babying a stock engine.
As of today 3/13/2012 my original owner 75 CB750F has made it through 3 wives, er EX-wives. Free at last.  ;-)

Blowing a head gasket, in the sense with which i grew up, means the part of the gasket which holds back the compression "blew". Is that really the case or is it just leaking oil?

If its just oil, then Jerry's got it.

In either case you'll need a new head gasket and they are availabel from many sources. Try Wiseco, APE, Dynoman, etc.
