just had a batch of home made cider come ready so off the beer for a week or two

one takes a 2 litre bottle of apple juice ( the stuff of the supermarket shelf, not fresh refrigerated ), open bottle add 2 - 3 teaspoons of sugar and 1/4 tsp of white wine/cider/champagne yeast ( available at brew your own shops), screw the lid back on then crack it open an eighth of a turn to let the excess gas out , leave 10 - 14 days depending on storage temps, when the murkiness drops out all the sugar in the juice has been eaten by the yeast and its ready to drink
decant gently into another bottle to prevent the yeast getting into your crisp fresh brew and enjoy
if you collect the yeast remnants in a 'mother' bottle you can recycle it into the next batch of juice, just use 1 tsp of the fresh yeast in place of the dried, occasionally feed the mother bottle with a few more spoons of sugar which keeps it alive and actually grows more in the process
all my mates call it prison hooch and hang #$%* on me but a) it tastes great b) its cheap as feck ( about $2 for 2 litres) and c) they can feck off
