I stripped all the wiring off my bike. Don't have a pressure gauge yet but I want to start er' up. Can I put a meter on the oil sending unit and be able to see when it pops above the 7.5lbs?

Pressure will break the circuit and no continuity.
No, as far as I know the senders are not analogue ouput units, just a switch that turns off when a preset pressure is reached.
