That's an interesting throttle linkage: it's got me to thinking. I've been wanting to make my linkage more progressive, as at low throttle openings a very slight move of the grip has a more abrupt reaction than I care for.
Also on the subject of Webs, have you ever flow tested one while attached to a 750 head? I wonder what the effect of different sized chokes would have on total flow? The optimum size choke would be the smallest one were flow was not increased by going up one size, I would think.

scotty if you move the linkage in the picture to the end of the lever, that will make the initial throttle opening more progressive. However, if will also increase the amount ot 'twist' required at the grip to get to WOT. I used different length levers depending on application - short for race car, longer for street, for the reason you mentioned. Agree re optimum choke size, but figure just asking MikeR how big a Mikuni to use would give you to right answer, and save dyno time.
