I've been brewing my own alcoholic ginger beer over the last couple of weeks. I think I'll start a thread. Anyway, the first batch (23 litres) has been a bit of a problem, in that even though I've added plenty of yeast and plenty of sugar, no bubbles have been coming up thru my airlock. I made some more on Thursday, and I can see that it's happily bubbling away, whereas my week old brew doesn't seem to be doing much?
I just tested it, it tastes OK, and my hydrometer says it's kicking out 5% alcohol, and it doesn't taste too "yeasty", so I just dumped another packet of brewers yeast into it, and I could see that straight away it was bubbling on the surface, so I'll leave it another week before I bottle it. I think the problem is that the brewers yeast should have been refrigerated as soon as I got home and instead I left it out overnight before I dumped it in the mix, and probably killed it.
No biggy, as long as it's nice and fizzy (and alcoholic) by the time I'm ready to start drinking it, life will be good. Or, alternatively, if it isn't nice and fizzy, I will be pissed off.
