It sounds like fuel starvation when the demand gets high.  Refresh my memory what exhaust/carb setup you have?  IIRC it was 4 into 1 (straight?) with no air filters at all.  Correct?

It has 4 into 2 straight and open carbs but has for 6 years never done this before Ive been contemplating making a intake so I can run a single Harley carb if I can't figure it out

If it's a new development I would check for obvious things like a restricted fuel filter, or a plugged tank screen (around the fuel pickups - if equipped.)

You might also want to take a quick peek at your advance mechanism just to make sure it's moving freely.

Any other recent changes?  Missing anywhere or smoking?

If these don't pan out You might want to pull the carbs/bowls and take a look inside IMO.

Is your battery good and charging system working OK?

Edit:  A bad battery and/or poor charging system can sometimes cause symptoms like that.

I messed with it today if I slowly give it throttle it revs to 7k then losses rpms to 6k and then it fuel sprays out the carbs guess I'll try smaller jets

Many facts missing.

Honda CB550.
Year????
Intake system????
Exhaust system????
Idle jets??
Main jets???
Needle position??
Mixture screws??

Putting on a single carb will work will be a lot of work.
If you know a lot about car carburetors then you have a chance.
TWO carbs would be easier.

One Mikuni 42m carb? I doubt you can make that work.
Intake would have to be perfect and jetting could be a 3 month investigation.
You could try a Honda car carburetor for a similar sized engine.
Maybe even use the intake manifold too.
Can you TIG weld aluminum?

Try changing the "drilled jets" back to stock... Honda may still have them..
