Mmmm....beef jerky
« on: August 26, 2012, 07:01:41 AM »
Anyone here have a dehydrator and make your own jerky?

I just got one last month for my birthday. Tried two recipes and they came out great. Making another batch today using one of them, a slightly altered Alton Brown recipe with a little more pepper and red pepper flakes.
Also, most recipes reccomend flank steak or skirt steak. I can't find it here and when I DID find flank steak, it was $7.99/lb.! I've been using London Broil, which was on sale for $2.99/lb.

Have any good recipes to share?

I've made prosciutto but never beef jerky. I do know that you definitely don't use steak to make jerky. Ever! Cheaper cuts should be used like the one you mentioned. I imagine if you used pieces of a sirloin roast it would work well. And would be pretty cheap also. I bought my dad a dehydrator for this exact reason and the SOB never used it. If you really want your mind blown, put a few pints of strawberries in that thing. Best candy youve ever eaten!

I make deer jerky in the oven. I started with meat sliced and cured, but now i ground it all, cure it and shoot it with jerky cannon to racks to dry.  Much easier process.
