Would these new carbs be a useful improvement to my SOHC and what is their value, (read: what should I pay)?

Got ya I was typing any old number being a arse. Because not knowing any thing about the bike they would be useless and over kill for most bikes.

What is your engine and is it modified at all?

Those are Keihin CR carbs and from the box it looks like they are the CR31's. I am running the CR29 carbs  and am very happy with them on my hopped up 836. Those 31's will work on a stock 750 but would be overkill and not very efficient, and you would most likely have to rejet them to work properly. New they sell for about $725.
Cycle X has them

Those CR are more carb than you need on a STOCK engine!! If your engine was bored(836cc or larger) and have a hotter cam, then you could get the most out of it with these carbs.  A good set of Roundtops or keyhole carbs tuned correctly work just perfect for a stock engine!!

Worth pointing out: overkill is a misleading term. It's not like 'overkill is awesome". Your bike can actually see a performance drop from overcarbing..  If you're going to use race carbs, you need to build a race engine to put in front of them.

Those are some nice carbs...I was thinking about those until i almost gagged on the price  :o  I found a beautiful stock set for my K4 on Ebay for 48.00  The carbs that came off the bike had a broken bolt in the main shaft and i could not get it out. Speaking of CycleX  ....Has anyone tried ..or know anyone using their twincarb set up on a cb 750???

There are a FEW of us chopper guys running the DUAL carb setup. There are PROs and CONs about them!! Some guys have great reports but there are just as many that have had problems and could never get them tuned correctly for their bike.
The dual setup isn't a good choice for a stock bike because of spacing and they stick out right where your knees bend. If you go to CycleX site you'll see that none of the bikes running the dual carbs are stock, they only show custom frame setup.
My opinion and from MANY chopper riders, the DUAL CARB setup don't deliver what they promise!!

I agree, we're saying the same thing:
o·ver·kill/ˈōvərˌkil/
Noun:
The amount by which destruction or the capacity for destruction exceeds what is necessary.
