Tis the season my official first batch of egg nog
« on: December 08, 2012, 07:54:36 PM »
It's that time of year again, where I make my homemade egg nog. I use the finest ingredients. The secret is fresh duck eggs they have a sweeter richer taste.Tonight was the first batch of many to come up to Christmas Day. Seasons greetings to all oh and put a little extra rum in it so I can keep chasing the wife around beings the kid moved out.

I'll stick with the rum part.   A glass of Old Sam, coke, lemon and lime  ;)

here ya go Rocking-M
3 eggs (duck eggs are better or farm fresh eggs)
1/3 cup sugar
pinch of salt
2 1/2 cups whole milk
2tsp vanilla
pinch black pepper
1/8tsp ground nutmeg
1/8tsp cinnamon
pinch of ground clove
1 cup heavy whipping cream
3tbsp powdered sugar
1/2 cup rum (optional)

preparation:
in a heavy sauce pan, combine eggs 1/3 cup sugar, and salt beat with wire whisk.gradually stir in milk, beating until mixture is smooth.cook 10 tom 15 minutes over medium heat stirring constantly, until mixture coats a metal spoon.remove custard from heat and stir in vanilla.place sauce pan in a large bowl of ice water (or use the sink)until custard cools stirring frequently.then refrigerate custard until thoroughly chilled.

in a large chilled bowl, combine heavy cream and powdered sugar.beat until stiff peaks form. stir in rum (if using) then fold whipped cream mixture into the cooled custard.pour eggnog into serving bowl and sprinkle with nutmeg.10 servings

you supposed to serve it immediately, but if your not make sure you stir it good every time you go to get a glass. this was a recipe i got from somewhere but my family and i had revised it to our likings.i do not want to brag but people ask me now if i'm making eggnog this year as they did the last 6yrs it is very good. if you use to much rum it over powers the nog. but will blend in good overnight.and the egg part if you can get free range eggs those are the best duck eggs make it sweeter and richer and that was found out by accident.i used the wrong eggs by mistake.my wife uses duck eggs for making cookies cakes and such.my in laws are hippies so i have access to free range eggs. i hope you enjoy

1/2 cup rum?  Seems a little light, I'd bump it up to 1 1/2

Thanks I hope you enjoy when you cook the custard make sure you keep stirring it until its done or you'll get cooked chunks of egg in it and that is not pleasing at all when your drinking it.
