CB500 Stalls When Warm

After rebuilding the top-end of my 73 CB500, we threw the carbs back on and fired it up.  I'm getting good spark when it starts and hardly have to choke to start it.  Once the engine warms up though, it begins to act up.  Goes from a nice idle, around 1100-1400 RPMS to a popping, chugging bandit and then eventually stalls out.  I haven't pulled the plugs afterwards, but I'm pretty sure they are wet.  Any ideas?
Should I pull the bowls and if so, can this be done with the carbs in the bike.  I'm really going to be pissed if I have to put those things back in again....my hands are still beat up!

Any help would be appreciated!

First hings first, pull the plugs!
THEN go from there. If the plugs are
wet as you suspect, it could be
flooding caused by the floats being set too high.
You can remove the float bowls with the carbs
on the bike, but it is a bit of a pain. You will
need to remove the carbs to set the float height
if that is the problem.
I also ride a '73 500 and have been through
a complete teardown/rebuild.

If you don't need the choke to start it when cold, then chances are it's running very rich at operating temp.  Like old #13 said, do a plug chop.
