Using a cork or something similar to plug the petcock holes may be a good idea if you use a weak acid like vinegar.  I've used several layers of electrical tape to seal over my tank holes, and that worked good to seal and didn't damage the paint when removed.  The electrical tape also didn't seem to be affected by any acid that I used.  I'd be afraid of cork getting "eaten" by something stronger than vinegar.
Why would it? it's used for wine bottles, and if you let wine ferment too long, it turns to vinegar.
No matter how fast or how far I rode, I couldn't leave her memory behind.

I've used cheap ear-plugs from Walmart couple of times to plug the petcock holes. Works well.

Forgot to mention to still use some duck tape so they don't slip out.

Steel fuel tanks are generally bare metal inside. The "air" inside becomes almost entirely fuel vapor fairly quickly, so there's very little oxygen to cause rust. Any water vapor gets dissolved in the fuel - if too much of that happens the water separates and pools at the bottom of the tank. This is why old tanks are often rusted at the bottom where that water pools.
The bare metal should not rust in most cases on a regularly ridden bike where the fuel is refreshed regularly. In very humid environments you should regularly add some gas line antifreeze (methyl alcohol) which absorbs water from the fuel or pool, and it gets passed through the engine.
Parking a bike for a long time can be trouble if the tank is not full: air will be breathing in and out as the air pressure changes with weather and tank temperature and the new air coming in will have some moisture which will accumulate. An empty tank will collect water this way as well. An empty tank should be stored in a dry environment with the cap open.

Get a pail of water, warm works better. Dump a box of Baking soda into it and stir it with a wooden spoon. When it's dissolved dump it into the tank for the rinse.

at the risk of sounding stupid... how do you wash out the baking soda water? I imagine with just water, but then i would have to follow up with 2stroke  oil + gas very quickly to swish n' coat.

How much 2-stroke oil do i put to how much gas?

Sorry, i'm a little anal about making sure i don't mess this up!
