First sohc project

I'm joining the club to help with my '73 CB750 project.  I have a complete motor in running condition that needs some attention after sitting 15 years or so.  I plan to replace the head gasket and all upper seals, and rebuild the carbs.  Looking for advice on reputable parts suppliers and any must-do tips prior to running the engine.
