I've had the same problem, and used three different methods - they all work.
Fist off, I've tried the grease gun method, and it works a treat. As I don't have access to compressed air (exept for the local service station), this method was my first attempt, and is the quickest and easiest in my opinion.
Compressed air works great, but make sure you don't aim the loaded caliper at any innocent bystanders! The shoe and piston will come out alarmingly far. Use a rag to cushion the impact!
Third method was just patience. I just held the caliper in one hand, and tapped the outside gently with a chisel handle (as I didn't have a plastic hammer), moving all around and across the top of the piston chamber. Eventually the pad was out far enough for me to do a little gentle levering on the pad sides, then back to the tapping.
