Head Gasket and Cylinder Compression

So I leak oil out of the head. My compression has severely dropped on a couple cylinders. It runs on three then four cylinders, skipping back and forth. Terribly annoying on long rides.
I know my head gasket is old. My question is this: If I decide to take out the engine and replace the head gasket, what are the chances that this will bring back good compression? I don't care about cosmetics. I just want a solid, reliable engine and less oil on my jeans.

I can't afford more than $1,000 total, at most, in repairs on the engine. If I were to take out the engine and remove the head, what would be the next best thing to do?
New pistons? Seals or gaskets? Valves?
I have about 60,000 on my bike. I ride it almost daily, minus the winter in Minnesota. I don't believe any "restore" work has been done.

The bike is dear to me.

Any help or suggestions is greatly appreciated.
Also, if anyone know where I should by the head gasket, please advise.
