for a 1970/71 carbs....will a rebuild kit for a k3 work?

If they have the type of throttle set up, then they should. 71 is the same as 73 I think, not sure about 70.

The main difference is in the jet size, I know the main jets get smaller as the bikes get newer.  I ended up buying  K3+ kits for mine and then 120 jets like what was stock.  I think at least K3-K5 used 110 mains.  I think the idle was the same...
