CB500 - Some Questions

Hello All. After making some good progress this summer on the bike (was finally able to ride the bike for the first time!!!) I've got some tuning questions.

First, there is some noise at the top end. I'm thinking the valves are too loose. I had some noise a few weeks ago due to noisy valves though, and it sounded a little different so I was hoping to get some input. Its more noticeable towards the end of the video.

Second, the bike stutters like crazy under throttle (roughly to 1/4 open). A quick look at the plugs indicated (I think) that they are a bit rich. My air screws are no longer stock though, as they came in a cheap rebuild kit, and I no longer have the stock screws. I am guessing the rich condition would cause the stutter under throttle? Plug look like 7. Only static timed for now, and the advance is working properly. PAMCO ign, and new NGK boots, plugs. Carbs are bench synced. Waiting for the rest to be working before splurging on a carb sync tool  :P



Third, the top end was just rebuilt. New rings, seals, gaskets, cylinders honed & measures, valve head ported and valve seats redone. I have ~5 miles on the engine since the rebuild  :P but carb tuning has prevented me from riding it more, and the cold is creeping in. Is it okay to leave the unbroken-in engine stored until spring?

And fourth, I pulled the clutch last week, measured and re-soaked in new oil and reassembled. Same day, everything was awesome, nice and smooth. A week later, I go to pull the clutch, and it is stuck again. I am thinking its just too cold (it was 20 F this sunday) but is it normal for the clutch to stick in a week? For now, I zip tied the throttle cable and its filled with Rotella 15-30
