Breaking in new engine with untuned carbs

Built a 750 with wiseco big bore kit. Also upgraded to stage 2 cam, optical ignition and dual carb kit. The carbs are untuned and for the few seconds I idled it, it idled high. I've got someone coming to tune the carbs tomorrow but I've only broken in injected car motors. I was wondering if there's some method I should follow to ensure proper seating and prevent damage during break in. Any info, greatly appreciated.

these days i am all for dyno breaking in, just because it gives you so much more control on engine loading and heat cycle. Sitting at a stop light just out of your garage or being held up by slow traffic / speed cameras is not going to do much good to ring sealing....
10-15  @ full throttle pulls,  increasing max rpm each time, change your oil, and you're set. make sure to use mineral for that, then switch to synth.

Yeh, we broke Samauto in on dyno,by 3rd run had 87.07 rwhp! Stock 38.9!!! ;D
