So I am looking to make some serious progress on a 1975 CB750 with around 9,000 miles on the clock.  This is really a cosmetic restoration, and refurbishing of wear parts.

I make the bad mistake of not labeling all the nuts and bolts.  Since I do alot of this I am looking at getting stainless bolts for most common type items.

Many of the parts that bolt on seem to use only 2 or 3 types of bolts like the battery box, electrics, turn signals, forks all work with a 10mm socket.  Other common ones are 12mm socket, and 14mm for rear shock bolts.

Ideally I would like to buy a bunch of stainless steel equivalent just to have them on hand.  If anyone has a list that would be great if not I will do my best to document things as I go.

I may have your model wrong, and you may need other diagrams to complete your inventory. But it's the best method for accurate accounting of bolt type, length and  pitch.

If you are unaware, most M10 bolts on these bikes were 1.25 pitch, and most common inventory at stores is 1.5 pitch. Do NOT mix them (obviously). Boltdepot.com is a good resource online for ordering exactly what you need, shipping is fast and efficient.

I just put together a complete order for every motor and side cover bolt for my 500. It took about 1.5 hours to get it right, place order and catalog. Worth it in the end. (To me anyway)

You might want to contact MarkB - Pretty sure he has spreadsheets of all the bolts with sizes, thread pitch, etc. etc.
I know I've seen and downloaded them - just can't find where I saved them.  He has a stellar restoration of a sandcast on the project page.

Stainlesscycle has 750 kits of polished or unpolished allen head screws for all covers, and everything comes pre-packaged and labeled. 
I too went through boltdepot.com and got all the engine and frame bolts. 
CMSNL will be your biggest help.  Go through each Fiche page for bolt specs.  Bolt depots bags have the BDpart # on the outside as well as the specs.
If you go this way BE SURE to make a list which connects the CMSNL FICHE PAGE Part # (& quantity) to the BOLT DEPOT PART #
 
ie.  CRANKCASE page #32 (6) = BD#1234
