carb probs

71 cb 350. 
running condition:  I can kickstart the bike and it idles about nice but slightly on the rough side.  this condition was before and after I rebuilt the carbs. 
the problem:  when I twist the throttle (slow or fast) the bike bogs down and then dies.  a couple of kickstarts and it starts and idles again.  I do, at the moment have the air cleaners off.  I had them on and off prior to carb rebuild. 
I set the idle mix screws at diff position and it did nothing. 
could there be an air leak on the intakes?
head gasket?
I also put new floats in maybe they need adjusting?
help I am almost out of ideas.  the big hammer technique is starting to be my only option.

two ideas off the top of my head:

1.) Check the Neddles. Make sure they are raising when you twist the throttle. They might be broken.

2.) How is your timing?

ya needles are fine they are working well.

I will check the timing though.  I just wanted to make sure there was not something I was overlooking on the carb side.

 I tried with choke off and on.  still I have probs I think KBO2 is probably right.  I really was hoping it would be something easy like the choke though.  thanks for the post
