Top end rebuild OEM vs aftermarket parts

As per this thread I've found myself possibly going to do a head rebuild. There's a good possibility of valves needing replacement in addition to all the gasket and seals. I'm looking to do this as cheaply as possible, so I'd like some advice on where I can save some money and where it's best to pay a little more for genuine Honda parts. Would it be okay to use valves like these, and if only some are damaged is it acceptable to mix and match?

What about the head gasket, etc? Am I asking for trouble if I don't go OEM?

Oh! i also need this information, rebuilding a 550 motor, anyone have information about valve removal tools? Does the Harbor Freight tool work well? Some say that it does not fit properly?
Also needed information about hone kits / bore gauge's if anyone has information.
I found OEM gasket kits from eBay going to around 130$ while this Vesrah complete set is around 105.

You can replace just any valves that are damaged. Nothing wrong with the ones you linked as far as I know. A damaged valve is probably on a damaged seat, so seat grinding may be required. The OEM valves have a very thin hard metal coating (Stellite) and don't last long after one grinds through that - if you need to do much to the valves beyond reseating with compound, new valves would be a good idea.
The guides should be checked and replaced if worn out. I don't know about suppliers for 550 guides.
