 I picked these up for dirt cheap because one has some rash on it. I'm using them on my XS650 project. They're '91 or '92 Zephyr 750 shocks.
 Google fails me. I know what/how the spring pre-load ring thing works, but what about the knob at the top and the dial at the bottom? Can you give me a quick primer on adjusting these shocks?

Guessing...both are for damping, one is for compression, one for rebound.  The higher the number or the farther turned clockwise, the higher the level of damping...not really sure which one is which.  You won't hurt anything (except maybe your ass a little ;D)with an incorrect setting...so just experiment until you start to understand or find the best performance.
If it works good, it looks good...

On my Penske shock the top adjuster is compression damping and the lower adjuster is for rebound damping.  I assume it would be the same here. 
For me,  I like to back off the compression damping completely and work with the rebound first.  Make sure both sides are set the same.  I then dial in the compression damping to suit me.
Should be a good shock.
