Are the spokes for these originally zinc plated steel? -my project cb500 four's spokes now that I have removed all the black paint from them are an ugly dull rusty grey color and I dont think the stainless steel ones readily available on ebay look like they're the right color!?

Yes and correct. Unless you are doing a true restoration the stainless ones are nice. I've used the spokes from cb750.com.
No matter how many times you paint over a shadow, it's still there.
