Has anyone used one of these Motogadget sensors? If so, where did you tap it and which size did you use?

There's probably no place you can "tap into" on the motor. Those usually need an adaptor installed in an oil/ water line large enough for the "probe" to be in the flow of liquid.

On the 750 it could be tapped into the nut on the end of the oil gallery on the right hand side, or weld up the threaded hole where that plug is and re tap it. I wonder if it could be made to fit into the oil tank drain plug..? Nice and discreet ...  ;)

I wonder what thread sizes are, the gauge cones in multiple thread sizes..

For oil temp, I'd either try it at drain plug location, or in the oil tank. After all, residual temperature of the oil outside the engine is a better indication of stress than what's occurring inside the galleys (my opinion).

I used the oil tank cap with gauge in the search for correct carb jettings. This verified lean condition.

maybe the drain plug under the engine might house a sensor? Drain plug with sensor available?

Good idea but I haven't seen one. Plus you'd have to route your wiring carefully.

I tapped into the oil gallery plug on the bottom left of the engine for a sump temperature gauge. Very easy to do. Dan  EDIT: I think the one I used was smaller tapped hole than the one you linked to. Many smaller ones out there.

I should point out the hardest part is sealing the sensor into the tapped hole but still allowing the threads to ground to the engine as the sensor will not work unless it is grounded. The nice part is that if you screw up the tap a new plug is only a few dollars. I have seen 280 deg F on a very hot day. Dan

What you need is an alarm threshold that you can set so a lamp will light on or will give an audible alarm. VDO used to have them. A gauge in it self is not very useful. Chances are little that your eye is on the gauge at the right moment. Besides your eyes should be on the road at all times. Overhere we're awaiting the helmet that has a headup display in the visor. Coming soon. Motorcycles with gauges in funny places like somewhere below the tank should be confiscated IMO.
