I think his stunt New Years Eve in Las Vegas was by far one of the most insane things I've ever seen. Jumping on Caesar's Palace was one thing, jumping off was another.

No question, it's cool. But people on snow mobiles have been riding water for years. And no modifications needed for those.

Yeah.  That motocross bike probably goes down extremely fast when you tip it over.  However, the MX bike seems to actually steer with the steering head, whereas the snowmobile is steering by leaning on the rear (with the front never touching the water).

Here's a quote from him in Rolling Stone Magazine about that wave.

"There I was on a motorcycle, with the worst thing that could possibly happen. I turned out from the wave and it crashed down behind me, chasing me down. I was picked up and thrown, and my bike landed on my back, knocking all the air out of me. It was the most violent ride I've ever been on, tumbling beneath the surface in full gear. Over the next four or five minutes, I only had two split-second moments when my head broke the surface and I could take in a fast breath, only to be yanked back down and tumbled with my bike. Everything was going white. I became completely limp and was prepared to take in a full breath of water, when I finally popped up. I could see the helicopter and Jet Skis, and had a quick moment to wave my arm so that they could locate me."

Tahitian big waves are no joke. Very shallow water and sharp, deadly reefs below. 

Laird Hamilton's drop into Tahiti's Teahupoʻo break on the morning of August 17, 2000 was memorialized on the cover of Surfer and in the 2004 film Riding Giants.  That break is particularly hairy and required him to tow-in to the wave to have enough take off speed to keep from being sucked into the tube.
