One of the spark units on my CB650Z has cooked, aftermarket replacements are on their way.  What causes these pesky things to cook? It is age or is it maybe a poor/corroded wiring joint causing the unit to overheat through drawing too much current? Electrics are not my strong point.

Mostly, the chromate plating on the plug's contacts is falling off and causing heating, which in turn damages them and eventually melts things. This causes other issues... The chromate plating was supposed to last 10 years, so it's goners now. You might wish to replace the plug on the wiring harness end to reduce troubles: you can get one from Del at www.vintageconnections.com, along with an excellent crimper to make it factory-new again!
