i dont wanna quit at all.  I know it probably seems selfish or myopic given that I have a family, but i love it to the point that I don't know if I can imagine live without it.  I sure don't wanna die doing it, but i also don't wanna die from not doing it.

I have the same thoughts...

I recently restored and sold a 77 cb750f, and am nearly finished with a (former basket case) cb750k5.  This is a place to share, learn and enjoy.  I am grateful to and for 99+% of this site's membership.

Glad you are OK. I spent 6 years on an ambulance and 15+ working in an Emergency Room and can tell you that you are VERY lucky. In fact, can you buy me a lottery ticket? Seriously, glad you are relatively unscathed.
Regarding the bike: Unfortunately, I think it will never 'feel' the same. If that bike felt perfect for you, it may never again.  I have driven 2 cars after they were fixed and was always thinking something was wrong with them; I felt it pulled to the left, the engine was making a weird noise, the frame was squeaking, etc. That said, you could salvage some parts and make another bike( I'm sure your parts will sell fast on this forum) or just build an entirely new bike. It would be like a fresh start once all of this is over.

 Get better soon and if you have an itch to get your hair in the wind while you are deciding, I have a sidecar you can ride in =)

Get a new frame and reuse what parts you can.

Take your time doing it. Another labour of love!

I think my next trip to Texas, if at all would be for MotoGP next spring...

That is very close to the wreck that totaled my vt1100 shadow guy made a left on a red turn glad to see you are OK I almost had my right leg amputated with 27 fractures but lucky for me the marine doc put it back together after I refused amputation at the civilian hospital and was transfered to the O'ahu military hospital my bike was not so lucky not even the engine was salvageable since the forks went threw the block

I'll be there, it's less than an hour from my house. Coincidently, the toll road to the track has a speed limit of 85mph, always is a fun drive to the track!
