So I need to get my tire changed but I'm nervous about the speedo drive. The screw is close to being stripped...would It be better to remove the whole drive?

You'll want to remove the whole axle anyway... and it should come off. Remove the disk as well.

You're talking about the M5 screw that holds the cable in? If it is close to stripped you should remove it, and put a new one in.

Better? -no, extracting and replacing with a new screw would be better, but
possible? yes - in my experience the shop would need to unscrew the axle and remove the speedo drive to fit and balance a new tyre anyway, so you could leave the speedo drive hanging on the speedo cable to avoid having to remove the stripped screw. I don't believe there's any reason to take the brake disc off.
If you're fitting the tyre yourself the axle doesn't have to be removed.
