Hi,
I just recently purchased a 1975 cb750 and am going to start a slight café conversion.
I am basically the second owner of the bike and the previous 2 owners were family.

I am new to any type of bike modification and will be learning as I go and what I have done to date was learnt from many posts here so thank you already!

So far in week one I have removed and cleaned the carbs, including jets, installed clubman bars and bar end mirrors, replaced the petcock, installed a fender eliminator and lucas style rear light and replaced the turn signals, oh and also disconnected that annoying turn signal buzzer.

I have a new seat coming and would like to remove the front fender.

I am telling myself that will be all for this year as I'd like to learn about the bike and slowly replace more as I go along.  Ideally I think I'd like to relocate battery, oil tank, etc and replace some of the controls and the fender eliminator was just a quick fix for now!

Any suggestions on front fender removal do's and dont's? Or, any other mod's that should be addressed first?

Howdy! Welcome.

If you're going to remove the front fender you'll need to replace it with a fork brace.
And never ride when the roads are wet. ;)

Assuming that your existing front fender isn't a total wreck already:

Put it away, buy a crappy version of same from eBay, drill out rivets holding fender to fork brace, install fork brace, ? ? ? , Profit!

That's what I did for now (about 5 years ago actually!). I put my pristine stock fender up in the rafters and run without a fender. I did however score a beat up fender to rob the brace from. It looks like sh!t but it's better than having nothing up there. A custom made brace has been on my later list for quite a while. I generally don't ride in the rain but the few times I've been caught I noticed that the thick leather tool pack that I run under the headlight keeps the tire splash down.

Thanks for the suggestions.
My current fender is quite pristine and I am keeping all removed parts so I may go the route of grabbing an old one to modify up...or a fender brace.

My advise would be to keep it stock, looks great like this.
