New..well kind of CB650 owner

I officially own a 1980 cb650. Bike has 34k on it. And still kicks good. The previous owners appear to have taken good care of it mechanically.    When I picked up the bike it had an unforeseen title issue (basically the last owner never plated the bike so never sent the title in to the DMV so he never actually owned it.   So tracked down the original owner and got him to get a duplicate.. Now 2 months later it's finally plated and in my name)  when I picked it up the bike looked like a scrapper and I was expecting a serious project. It was missing a side cover had a busted tail light and was pretty dusty/dirty the color was a chameleon green with purple base   from a spray can. I blew off the dust and cleaned it up some hung a charger on the battery and pressed the button. To my surprise the bike fired right up without one bit oh hesitation.  So I shut it down and did a quick check over everything. Checked brakes oil etc.  Then fired it up warmed it up and took it for a quick spin(plateless(yea Yea I know bad))  around the block. Man do these things move. Since then I found a side cover,  got a tail light lense, checked the charge system and found the R/R to be bad so put did the automotive version of it and made an airbox lid to make it run how it should. I pulled the carbs and really jetted them back to stock (it had a 120 main jet in it for some reason...)  cleaned em up and pulled the tank. It was sanded down and had a coat of primer on it when I was told to hold off on everything until we know we can get the title taken care of. Which brings us to today.  A week ago I was told go for it. So the tank is nearly done,  the side covers are under way,  and I've put in an ATM fuse block. Tomorrow I should have the final coat of clear on the tank and hopefully a coat of black on the side covers. I'll post pictures when it's done.

This winter I'd like to pull the motor out of the frame and rip it down. Give it a good going through and reseal everything. Possibly new bearings and pistons if I can get my hands on  them.  Then go through do the rest of the bearings on the bike and go and make it look new.  I am not sure which direction I'm going to go,  I think it's going to be a cafe bike.  But possibly something similar to the steampunk cb350 called isabelle if you have seen it.  I really like that bike and have some ideas for something similar.

External oil cooler
Maybe this external oil lines thing Ive seen mentioned..
Progressive springs
Headlight bracket ( this one is pretty beaten up and I like the look of the clamp on one's)
Any suggestions for what else?

Why redo the engine all the way to a tear down?  Does it smoke? Have low compression?  If not, a tuneup should be sufficient.

If it ain’t broke, don’t fix it.
