We only went with one rotor by choice. It was a lot easier for us to machine an adapter for the existing rotor. We wrestled around for an hour or so going back and forth, but ultimately I like the single rotor look better, so we went that route. Also easier as mentioned before. The front wheel is offset by a 1/4 inch, maybe 1/3. The caliper was getting pretty close to the spokes, so we decided to leave a 1/4 inch of room. I put 50ish miles on it on Saturday and it didn't handle poorly at all. If anything, the ride is stiff as hell so it going to take some getting used to. Pretty happy with it though, and considering I only ride this to work (15 miles) once, maybe twice a week, I'm not too concerned about the offset. It'll allow my to get tires sooner :)

Yes, you should definitely invest in some higher performance rubber ASAP.  If you are running a stock 19 front, you could go with an Avon Roadrider, Bridgestone BT45 or something with similar improved grip.

Most people shave the backside of the caliper to provide clearance for the spokes instead of offsetting the wheel (not a great idea).
