Thankyou two tired ,when I set the fuel air screws to 7/8 out it idles to fast and I can't slow it down but the plugs look more tanned like I'm getting closer
How do I adjust the pilot jet or is that not possible
Also what does that little brass screw do with little flat screwdriver
If I open throttle from 0 to half it sometimes stall

bench sync your carbs.
clear tube test your bowls.
vacuum sync your carbs.
control your idle speed with the idle set screw
your IMS need to be set based on idle plug chop color.  7/8ths out is just a starting point.

Have you done the clear tube test to insure your floats are adjusted and working properly?

A little advice, scoot.  When someone takes the time to give you good information, or instructions for fixing your issue....do it.  Do it well, and report your results.
You're all over the map talking adjusting pilot jets, the bike stalling with throttle, brass screws.....We dont even know if youve bench or vacuum sync'd your carbs.
Did you do a clear tube test of your bowls?  What were the results and did you correct any deficiencies?
Chill dude, and get some of these suggestions done....and report back with your results.
Everyone here is glad to help.  No one here likes having their time wasted.    You're alienating the wrong people.

I very much appreciate good advice as this is my first bike complete restoration it is now in showroom condition

I came into this one late so I missed twotired's replies. I have no doubt they were his usual careful and detailed responses. Responses that take more than a little time to write. Time is something we don't get more of, so his generousity with his is admirable. He understandably would prefer that his time and effort isn't wasted. You might consider that.

Forgive me, where is "were I live" exactly? If Cumbria (as listed din your profile), then you might fare better using the UK Sister site of SOHC. If you register with the same avatar, its quite easy for them to recognize you.

Shame you've sent 2 incredibly knowledgeable and helpful people down the road. Keep at your bike, you're bound to get there with somebody's help.

This my bike resto my first one
I recond the engine myself new she'll bearings ,new cam chain piston rings guide an pins etc
Frame is powder coated and everything else was either cleaned up or recromed
I set the valves the points and the timing and I have just stripped the carbs because of a lean condition that's puzzled me which I think might be my fault
It is all stock apart from aftermarket straight through exhausts which have got some sort of push in sound killers that don't work
78 mains 38 pilots floats set to about 23 mm
Questions
1 how do I adjust the slide height
2 the air screw and the air/fuel screws are different yes so I set the air screw for tan sparks at idle then sync with the air fuel screws
3 is the air screw the little brass screw on the side of the carb flat blade screwdriver
I think setting the carbs is a bit of a dark art

I don't know if I can follow you here. The airscrews should be at 7/8 ± 3/8 of a turn, so I'd start at 7/8. To my knowledge there are no other adjustment screws, not for mixture.
Mixture and syncing are two different things.

I took the carbs off again to clean them
Put them back on and and started bike,I had black sooty spark plugs and the sync was way out
I sync the carbs but the spark plugs are still sooty.i set the little brass screws on the side to 1 1/4 turns out but I dont know what they do
Do I adjust these screws out as well as the sync screws out to make it leaner
I haven't taken it for a run yet as I have been doing this whilst idling
The spark plugs stay sooty for a while when just idling I am trying to aim for tan looking plugs
I have set the foam floats to about 23 mm
