76 550F throttle twist

Is it normal to almost break your wrist trying to get WOT?

I usually have to reposition my hand once I'm going to be able to pass someone if need be. Then I have to let the throttle roll free in my hand to close it.

The cable adjustment is maxed out and the play is very minimal.

That's pretty normal for these bikes. I asked the same thing a while back.

There is a nice little mod you can do to remedy this though. Search quick turn throttle.

I used a plastic pipe and super glued it to the throttle tube after cutting and heating it to shape. You'll have to play with the thickness until you get what you want. It does make the twist a tiny bit heavier, but it wasn't an issue for me.

No problem, I have about a 1/4 turn throttle now, it's nice. It actually makes the bike feel faster too, haha.

Yes,  I did what Dave did.  Not the same way, I machined mine out of delrin this winter.  It feels quicker than before.  I may increase thickness later to see what happens.  Mine was on a 76 550K with motion pro cables and throttle assembly.
Some have changed the spring, too.  I have used a 60's VW carb spring back in the 70's.  The cables must be routed carefully for the throttle to return. I use the stock spring now.

NO doubt. I done away with my return cable. Keep a spare spring in my bag.

Are there no good quick throttle tubes on the market for these bike?

Your carbs don't have an accelerator pump.  A quick turn throttle on this bike is a recipe for engine wheeze instead of acceleration.

Sort of:  Here's the physics...
Mechanical carb slides opening too fast cause massive pressure rise in the carb throat.  It's the differential pressure between carb throat and outside air that push the fuel through the carb jets.  Less differential = less fuel.  So, it's not exactly more air, it's that there is little to no fuel for the available air.  Therefore, the wheeze instead of power.  Accel pumps are the standard workaround for this issue.  Squirt raw fuel into carb throats to avoid fuel starvation and rapid engine pickup.   Note, the EPA didn't favor this approach, as it increased unburned hydrocarbons into the exhaust.  Part of the reasons for pervasive fuel injection in vehicles for the general public.

Even when these bikes were new and in peak condition, snapping the throttle open from low speed let the engine fall flat until the throttle was reduced.
Some compensation for throttle twist wheeze can be had by tuning idle circuits very very rich.  Of course, then you can't expect 50 MPG or keeping the spark plugs and exhaust from sooting up in a short period of time without adding some extended WOT operation to heat up the plug deposits.
Racing operations wouldn't care about this.  A well mannered street bike would be improbable, though.
