Welcome to the forums. Nice winter project. Consider electrolysis for the tank...better than eating all metal in tank with acid and very effective means of rust removal.
Carbs may need a good ultrasonic bath, but the Yamaha carb cleaner is good and Home Depot's Purple Simple Green, an industrial biodegradeable solution, works very well at 50% strength in an untrasonic if you go that path.
CV carbs, not our bikes, definitely require an ultrasonic bath.
Your float bowls with a bit of sanding and buffing can polish up very nicely. If you like polished aluminum parts.
Also, only go with Honda carb isolator rubbers because several of aftermarket just do not hold up and buying new ones every year or two years is a waste of money in my book. Keep the original carb brass parts, do not install aftermarket brass parts, nothing but headaches. So, buying full rebuild aftermarket kits with brass is often a poor choice, learned the hard way.
Stock motors run best with the stock carb airbox, they run far better with it, than without it. Not a anti-pods statement, but one of simple fact and overall operation at any throttle position is superior when using the stock airbox and filter.
Also, steer clear of Daichi points and condensors...just bad products overall...cheap points and condesors are most often this brand. Tec points & condensors from Honda are ideal. Or, better yet... Hondaman's electronic ignition with a new set of Tec points...last set you will need to buy...just need to grease the felt for the points cam as part of annual maintenance.
