Yea it's funny you just put this up, I literally pulled the 160 motor yesterday to go all mad scientist inside it (major port job, 11:1 compression by milling the barrel, cutting the piston, etc). I can help you out on all the go fast stuff in the motor, and as well as where to get the right parts. Lacey Ducati and classic ducati in Britain have everything from making a little more power, to almost doubling what it had from the factory. Obviously budget comes into play. If you want an awesome frame check out malarkey engineering. They have a killer ducati single frame. The 350 nc is something I've been wanting for a while, very jealous!
