No, not the Kawasaki Triples, but my smoker grill!

I bought this grill a couple years ago from a buddy that rarely used it. With boating season over and me being between bike projects, I have a little time and decided to fire this baby up. 

Bought some mesquite wood at the local firewood stand and bought a big chicken and a couple slabs of pork ribs. They've been on about 5 hours with another hour to go.

Any of you guys smokers?!

My buddy and I smoked a papa murphys pizza with his barrel setup.  Best damn pizza you’ll ever taste!

My wife gave me a red one (Kamado Joe)for my last birthday. Have used it exclusively for smoking. Big fan! Have done ribs, chicken and salmon. Awesome flavor.

As a matter of fact, I did wake up with a slight hangover this morning!

After the Smokin! dinner, we went to an Xmas party, was good seeing some friends we hadnt seen in a while. The booze was flowing!

So back to the meat:  the chicken turned out fantastic!  I'm a breast man and it was very moist with that great smoke flavor.  Other than the spice rub I put on it pre-smoke, no other spice or sauce was needed.  I dont like to over power the taste of the meat with BBQ sauce.

Unfortunately, the ribs were another story, I would rate them at just good.  The flavor was good but they weren't fall off the bones tender, so I was a little disappointed.  We still ate them but I've certainly had better ribs at the local BBQ joints.  Dont get me wrong, we did eat them and didnt thrash the leftovers. I may sauce 'em and cook at a low temp to hopefully get them more tender.
Any of you guys excell at ribs?

I would like to smoke some salmon next time and the pizza sounds interesting.

 I have one of the big barrel kits, it works good with cherry wood, my only problem was when the thermometer went bad and I throttled the temp too much. You can also smoke them a couple hours and finish them in the gas grille or oven.

A couple days after I smoked the chicken and ribs I still had a fair amount of chicken left and decided to make Smoked Chicken Enchiladas Verde.   
[I'm the cook in the kitchen, my wife only cooks in the bedroom...ha!]

I'm a big fan of Mexican food, there is an endless list of good local Tex-Mex restaurants around. Seems all of them have a different recipe, some better than others.  I dont make enchiladas very often but I do have a good, basic recipe, so I used the smoked chicken breast and they turned out great.
And served with Mexican cerveza, of course!

For Thanksgiving, we went to the wife's Uncle way down in South Texas, just a couple miles from the border of Mexico.  Uncle Mike is a great guy and pretty funny, we always enjoy spending time at their house.  He's got a nice set up in his back yard where he loves to BBQ and drink beer. He was smokin' a ham for Thanksgiving and it turned out great. So I thought I would give it a shot...


My New Braunfels Smoker doin it's thing, I used pecan wood this time...







The huge ham [only $8] and a [$6] chicken all smoked out.....








The wife set the table for this awesome meal, the smoked meats served with potato salad and baked beans....








Mmmmmmmmmmmmmmmmmmmmmmmmmm

I'd like to try a piece of that ham, how much is shipping to 92881? Haha!

Yes, I use a foil "tent" when smoking.  $10 shipped gets you a big hunk of smoked ham!!

Great idea, maybe next weekend.  Dont want moo, I will smoke till a safe internal temp of 145*F.

No time to smoke this weekend, took the Vette to the local Cars and Coffee car show. Was a little chilly at 8:30 this morning with the top down, it was 35*! 

So I bought this big chicken the other day and
thought I would cook "Beer Butt Chicken" tonight!

You start with two beers, 1 for the chicken, 1 for the cook...





Then you open the beer and shove it up the chic's arse! Pour some olive oil on her, sprinkle your favorite rub on 'er and pop a potato in 'er neck...





Two hours at 350* and she'll be fit to be eaten!

Steve-o, try this one sometime. Cornish game hen (those little chickens) and rice. Season the inside the way you like it, rub with butter and the seasoning you like on the outside. Cook the rice then stuff it full in the cavity, you can add chopped onions or celery if you like. BTW I just use minute rice. Staple the hen's butt closed then cook away. All the juices are absorbed by the rice and it comes out like brown rice. Once it is cooked to proper temp, dump the rice and start ripping meat off that bad boy. Best little chicken you ever had and the rice makes it a whole meal.

I usually figure 1 bird per person. Haven't done one in awhile so now I made myself hungry!

So back to the Beer Butt Chicken, after a little over two hours in the oven, it comes out like this...








The meat was very moist and tasted good.  However, nowhere near as good as smoked, but only 1/3 the time.

Served it with corn and beans for a great dinner.

I'll do it again when I want roasted chicken and dont have time for the smoker.

I used to have a pirate station, and one fella I knew asked what my call letters were.. WEED? I said yeah we're SMMMOKIN'!

I made a beer chicken cooker out of some thin wall stainless 2 1/2" pipe, with a cross of 3" stainless plate, about the height of a Fosters can... man did that work well on the grill! And then you can fill it with the brew of your choice!
