stupid follow up ?. Should I remove the valves, springs etc or just tape up and cover the non PC area?
You remove everything from the head apart from the valve guides and valve seats 
Make sure that you store everything so that when you reassemble the valves and other parts go back on the same cylinder they came from. I would take the time to lap the valves too when assembling.
