I just watched a video on how to remove the swingarm bushings that the shocks attached to which didn't seem too terrible but I have no idea how I'm going to remove the big bushings/collar things in the swing arm. Do they have to be removed to be powder coated?

I don't know if you have to remove them before powder coating but if you plan to install new bushings it's probably a good idea to get the old ones out before powder coating. Because it's easy to do some damage to the paint job on the swingarm when you remove them. So you might as well take them out before the swingarm goes to the powder coater.
If you aren't going to replace the bushings then perhaps they can remain installed, just make sure the powder coater knows to block that passage in the swingarm.
I think that the next time I powder coat a swingarm I'll remove the old bushings, install the new bushings, then make sure that the powder coater does not powder coat inside the swingarm tube.
