Is this going to be a street, race/track bike or both?  I was a little confused since you ordered the fairing with no headlight hole, were planning on AM22/23 track tires, and were thinking about which class to race it in, but you installed Motogadget switches on the left bar, presumably for lights, signals, horn.  Of course you can do both.

I think polished metal looks spectacular for a road or show bike, versus a track bike that may get scratches or scuffs from leathers, where the matte finish might be more appropriate.  It's a matter of taste in the end though.

What are your plans for the motor?

Also, what's the name of your shop?  I saw cars in the workspace, so I presume it's primarily automotive.
I’m actually a little confused also. When this all started it was a CR for the street. However like most long term projects my direction has shifted. The plan at the moment is a street legal race bike.  When I wrecked the original bike the frame was salvaged. I did not want a rebuilt title. So I sourced a new frame, no title and out of the system. So the bike will require inspection when completed. Hence the switches, the bike will be inspected with all functioning lighting, no fairing.

Then the fairing will go back on with no lighting. It will primarily be used as a race bike. With the option of street use if wanted. I’m planing on going after the AMA MPS-CG in 2021 at Bonneville.

I’ve decided on a matte finish, with clear powder coat. The engine is coming from BenelliSEI, I will change the pistons, 12.1 + 1 from CycleX. Keeping it at 750cc for the record attempt.

I’m not working at the moment. Still in and out of the shop for my own pleasure. Just not enough work with everything going on to keep the shop open. I’ve been with FixCarNow for 12 years, funny name I know but we are well respected. I’m the lead technician of 3 locations. I started at Audi, I still specialize in European cars.

I have a vision for the bike. However the cost is getting out of hand lol. So keeping to my vision is getting harder. Thats the main factor at the moment.

If costs are a concern, a race motor can be rabbit hole of spending on high performance parts.  To really take advantage of a high compression over-bore piston kit, you'll want a cam and a ported head.  The head is probably the most important and most expensive.  BUT, you can do things in stages.  For instance, get the bike running and titled.  Reacquaint yourself with it and then make it go fast.

More important that getting it to go fast is improving the braking (which you are already doing) and upgrading the suspension.

Since you are in LA, I'd recommend you going to one of Brady Walker's Classic Track Day's at Willow Springs.  https://www.bradywalker.com/  They are very well run events and have suspension techs on hand to help dial things in.

Dyna Ignition with wiring harness, kill switch and tach. “F” gearbox. Crank has been lightened, Carrillo rods, balanced. DOHC cb750F pistons (new valve pockets by Rick Andrews). Lots of head work, Megacycle cam (“Kenny Harmond F grind”), Black Diamond valves and springs, note the cam box hold down system.

Great looking progress.  Now you just need to complete "everything else", right?  Good luck with the move.  Make sure to organize all of your parts and label boxes before moving.  Stuff tends to get misplaced in moves.

 I will do my best with organization, sometimes it’s second nature other times not so much. What’s exciting is I now have all of the components for completion. Next step when it’s in its new home, complete disassembly, coating bits and buffing others. Then final assembly, and some long fast rides!
