Does anyone know where the seat in the photo might be available, particularly in a '77 and '78 750 version?

 That looks like a Guilera (sp?) seat. Check out Texavina.com for something similar.

Yamiya have been selling a giuliari replica, but i doubt they make one for k7/8.
