Do you just want it to look good or do you want it to handle nice and neutral like it did from the factory? You know, where you can steer the bike by thinking or leaning into the turn instead of wrestling with the bars to hold your line in a corner?
The stock set up would allow enough lean over to scrape the pegs in the corners. What, exactly do you expect to get from wider tires?
A smaller front wheel will lower the bike and change the head angle, making the peg scraping thing occur at less lean angle among other things. I suppose it will look more modern in the parking lot, though.
So, what do I think?
I think the shop makes more money on wider rims and bigger tires than they would make selling you the correct or nearly correct size tire for your bike. They certainly don't have to actually ride the bike and then spend the time and energy working out actual performance improvements.
How much will you invest to work out the handling differences, or will you just live with (or sell) the resulting experiment?
