A cheap dial gauge like the one HF sells for $16 makes truing much easier than eyeballing it.
You only go around once in life so it might as well be on a motorcycle.

I find dial gauge gets in the way till you get it down to about 1mm or 1.25mm.... like 1/16 inch or better.

A bicycle wheel trying stand works great if you can borrow one. Also follow the wheel lacing thread here I'll look it up.

finished lacing both wheels up but i'm going to drop them at the local shop to true and mount tubes and tires and balance.  came out great imo.  took the approach of taking one off at a time and taking off others that impeded the progress of changing the one i was focusing on.  at most i had maybe 5 off at a time.  generally it was 3 at a time.  definitely takes paying attention to where you are in the process.  cleaned and added anti-seize as i went.

Godfrey or TruDisc (maybe spelled that wrong) Both are good.
They'll drill it too if you want, sheds a little weight and aids with water shedding, makes it look cool, which is very important. If it looks cool, it's faster and works better.

When you say grind how different of a process is that than turning and cutting on say one for a car disk?

very different...requires totally different machinery.  Car discs are cast iron which can be cut on a lathe type machine.  Cb750 discs are stainless...much harder, too hard for a dedicated brake lathe.  I think some have managed it with special tooling but most will not want to risk ruining their tooling.  Thus it is a specialist grinding operation.  Fortunately, the stainless is so hard and thick, these disks are virtually indestructable.  I can't imagine one ever actually needing to be trued.  I had mine ground thinner and drilled to save weight.  The fresh ground surface does give better stopping power, but this will smooth out to the same old surface after 4 or 5 thousand miles.
If it works good, it looks good...

Car hubs lend themselves to being machined, easier cutting better supported..
Bike disc requires making adaptors , and very tricky to machine.  , very easy to screw them up..
Grinding with disc removed can be fairly easy. . But different equipment..
I spelt name wrong ..it's Godffrey I think..

Evinrude , you were sooo close to the finish line with your wheels....
If you just want to spiff up the rotors spin them in a late and block sand it.. amazing.. but you have to cover the lathe ways and clean chuck real well..

How important are these? Thought I read the sprocket cover could go but what about the nut savers?

That “sprocket cover” always fascinated me. I suspect it’s purpose is the ensure a broken chain doesn’t get down and tangle on the axle? Anyone know?
PS. Toss it.
