what exactly is considered bad piston rings? I had a base and head gasket leak so I have torn into my engine. There is some resdue on the piston heads but the rings look fine compared to some pictures I've seen. Can I reuse these rings? It probably doesn't make sense not to replace them, but I have read that some people don't. Hell, hopefully I can get this thing back together.
Any info would be greatly appreciated.

If all the clearances check with the manual go ahead.

check the cylinders to see if there within spec, if they are then hone and I would use new rings.  If not go 1st oversize.

1st oversize of Piston and Rings??? Can you put oversized rings on the OEM pistons to make up the difference?

Nope, you need to have the oversize pistons as well.  When I did my 550, I could only find 2nd oversize (two years ago) at the time, broke a ring last week putting the engine back together.  Bought rings from www.siriusconinc.com.  cmls now has oversize piston and rings for sale on their website, all prices are in Euros though.  The 750 guys can tell you better then I where to get oversize for the 750s

While we're on the subject of engine rebuilds, anyone know of a good how-to resource?  It wouldn't necessarily have to be specfic to Hondas, but it'd be great to have a book which covered these kinds of questions.

Or is the best resource the honda repair manual?

This forum! I also have the Clymers repair manual. I hope its good, cause thats all I'm using....I figure drink a six pack less and I should be able to get it back together.
