Yet another carb question

I know everyone is sick of reading about carb questions, but I'm stuck and need some help.  Recently cleaned and rebuilt my carbs ( about 3 weeks ago).  I put them back on the bike and it ran great.  Since then the bike has been stilling, while I was doing some body work.  Everything is back together now, but I can't figure out what I did wrong. 

It starts right up but seems to struggle with the chock open, won't start without help with choke closed, if I blip the throttle it will rev up and then idle between 2-3k.  Then if I crack the throttle, it seems to rev up great but will idle down and die.  I did check the plugs and they are very black.  I replcaced the plugs, and pulled the carbs back off and did another bench sync.  It didn't seem to make a difference.

Any suggestions?

Vacum leak around the carb to head boots, could that cause my listed symptoms?  I cleaned out the slow jet like Two Tired said, but didn't seem to cure my issue.  While idleing around 3k I sparyed boot with starting fluid and she jumped to 6k.  I know I need to now replace the boots, just wondering if could be the cause for all the symptoms?

The sooty black plugs indicate
a rich mixture.
When you cleaned the carbs did you remove and
clean the emulsion tubes?
Bikes parked out front mean good chicken-fried steak inside.

nope, I didn't.  Just got done cleaning them out, they were gummed full of crap.  As soon as I find out if the local Honda shop still has the bolt/cap that I lost, I toss them back on and see what happens.

A vacuum leak on the intake runner allows extra air into the mix creating a lean mixture.  The leaking boots explain the racing at idle settings, and the need to apply choke to keep it running, as that makes the mixture richer by inducing higher vacuum.
The application of choke may be overdone, causing a richer mixture and sooty plugs.

Does this sound like what your encountering?  The symptoms are similar to plugged slow jets because the fuel mix is severely leaned at low throttle settings.
