Does anyone know the stock jet sizes for the CB360T? 

The reason I ask is that I've been having an impossible time trying to get my 360 to run well, if at all.  It will only run if I shut off the petcock and let the fuel level in the bowls run low.  It will then idle just fine, and I can even ride it around the block like that as long as I turn on the fuel occasionally to let a little in.  When I turn the petcock on and leave it on, the engine bogs down and dies. 

The engine has been taken apart, checked, cleaned and put back together with new gaskets.  Same with the carbs.  This is the sixth time I've resurrected an otherwise dead motorcycle and the first time I've had this much of a problem getting one going again. 

The only thing I can think of now is that the carbs I bought for it do not have the correct size jets in them for the stock 360, which may be causing it to run very rich, which can be temporarily remedied by shutting off the fuel and allowing the level to fall.

I think you should re-check the float height before you do anything else.
If it was the jets the problem would pretty much stay until it was almost out of gas (about 1~2 miles)
 Honda carbs are done with gasket surface tilted to approx 60~70degrees from horizontal, even though the manual shows them completely inverted.
What size main jets do you have? stock is 35 pilot, 68 primary main and either 68 or 95 secondary ( Clymer manual, cant find other ones at present)
The pilot should have a rubber plug over the end of jet tube (feeds from main jet)
Float height, 19mm

Thanks for the info.  As for the float height, I've checked, re-checked, and re-re-checked them, and they're set correctly.  But of course I'll check them agiain when I have the carbs off to check the jets.  I may tear into them again tomorrow after work if I'm motivated enough.

This should help, straight from the Honda manual:



I'm experimenting with running 90 mains (stock being 100's) as the bike runs rich ad mid-to-upper throttle, foulding out the plugs after a while. Unfortunately, you can't just drop the needle like with non-CV carbs.
